Beet and Goat Cheese Salad


2 bunches of beets

2 tablespoons of olive oil

2 tablespoons of balsamic vinegar

2 tablespoons of honey

1/2 teaspoon of salt

1/4 teaspoon of freshly ground black pepper

4 ounces of creamy goat cheese

2 tablespoons of chopped fresh parsley


  1. Preheat the oven to 425°F.
  2. Trim the beets and slice them into thin wedges. Place them onto a large baking sheet, and toss them with the olive oil, balsamic vinegar, honey, salt, and pepper.
  3. Roast the beets for 25 minutes, stirring halfway through.
  4. In a large bowl, combine the warm roasted beets, goat cheese, and parsley.
  5. Serve the salad warm or chilled. Enjoy!
