Crispy Gnocchi & Mushrooms


1 pound gnocchi

2 tablespoons olive oil

8 ounces mushrooms, sliced

2 cloves garlic, minced

1 teaspoon fresh thyme leaves

1/4 teaspoon sea salt

1/4 teaspoon ground black pepper

1/4 cup white wine

1/4 cup grated Parmesan cheese


Nothing says comfort classics like this side dish!

  1. Preheat oven to 400F.
  2. Place gnocchi in a single layer on a baking sheet. Drizzle with 1 tablespoon of olive oil, and bake for 15-20 minutes, or until golden brown and crispy.
  3. Meanwhile, heat remaining olive oil in a large skillet over medium-high heat. Add mushrooms and sauté until lightly browned, about 5 minutes.
  4. Add garlic, thyme, salt, and pepper. Sauté 1 minute more.
  5. Add white wine and simmer until almost evaporated, about 2 minutes.
  6. Remove skillet from heat and stir in Parmesan cheese.
  7. Add crispy gnocchi to skillet and toss to combine with mushrooms.
  8. Serve immediately. Enjoy!
