Roasted Artichokes


4 large artichokes

2 tablespoons of extra virgin olive oil

2 cloves of garlic, minced

1 teaspoon of dried oregano

1/2 teaspoon of sea salt

1 teaspoon of freshly ground black pepper

Juice of 1 lemon


  1. Preheat oven to 400°F.
  2. Trim the artichokes by cutting off the top 1/3 of the artichoke and removing any tough outer leaves.
  3. Cut the artichokes in half and scoop out the fuzzy centers.
  4. Place the artichoke halves in a baking dish.
  5. In a small bowl, mix together the olive oil, garlic, oregano, salt and pepper.
  6. Drizzle the olive oil mixture over the artichokes.
  7. Squeeze the lemon juice over the artichokes.
  8. Roast the artichokes in the oven for 25-30 minutes, or until they are golden and tender.
  9. Serve warm. Enjoy!
