Twice-Baked Potatoes

Ingredients

4 large potatoes

4 tablespoons of butter

2 tablespoons of olive oil

1/2 cup of sour cream

1/2 cup of grated cheese

1/4 cup of chopped chives

1 teaspoon of garlic powder

1 teaspoon of onion powder

Salt and pepper, to taste

Method

The combination of the creamy, buttery texture and the savory flavor of the potato skins in this dish are what make them so enjoyable. No matter how you choose to enjoy them, baked potatoes are sure to be a hit!

  1. Preheat oven to 375 degrees F.
  2. Scrub potatoes and pat dry. Prick potatoes with a fork a few times.
  3. Rub potatoes with olive oil and sprinkle with salt.
  4. Place on a baking sheet and bake in preheated oven for 45 minutes, or until potatoes are tender.
  5. Remove potatoes from oven and let cool.
  6. Cut potatoes in half lengthwise and scoop out the insides, leaving a 1/4-inch thick shell.
  7. Place the potato insides in a bowl and mash with a fork.
  8. Add butter, sour cream, grated cheese, chopped chives, garlic powder, onion powder, and salt and pepper, to taste. Mix well.
  9. Spoon mixture into the potato shells and sprinkle with additional grated cheese.
  10. Place potatoes on a baking sheet and bake in preheated oven for 20 minutes, or until potatoes are hot and cheese is melted.
  11. Serve warm and enjoy!
